PISTACHOK GELATO: BANANA, CHOCOLATE AND PISTACHIO

Ingredients

  •   1 banana
  •   Half a tablespoon of coconut oil
  •   20g (ca. 0.7 oz) of 90% extra dark chocolate
  •   Pistachio grains

Preparation:

The night before, or at least 4 hours before, cut a banana into slices and place them in the freezer inside a freezer bag. The next day, or after 4 hours, blend the frozen banana slices until a thick consistency is obtained.  Meanwhile, melt the chocolate with the coconut oil in the microwave or in a bain-marie. Once melted, pour the chocolate over the pureed banana, and add some chopped pistachios, as much as to taste.

Place it in the freezer for 5 minutes and when ready you will get a banana gelato with a thin layer of crunchy chocolate on top!
