Blancmange

Blancmange. A healthy dessert and a traditional recipe. Enjoy! 🍮

👩‍🍳 Ingredients for 10 people:

Serves 10

• ½ liter (17 fl oz or 2 cups) goat milk
• ½ liter (17 fl oz or 2 cups) almond milk
• 120 g (4 oz or ½ cup) sugar
• 2 packets of vanillin
• 60 g (2 oz or ½ cup) potato starch
• ½ sheet of gelatin
• 1 organic lemon
• 200 g (7 oz or 1 ¼ cups) peeled almonds, toasted and chopped
• 100 g (3.5 oz or ¾ cup) toasted and chopped pine nuts

Mix the starch, sugar, and vanillin. Gradually add the two types of milk previously mixed and then the yellow part of the lemon zest, finally, add the ½ sheet of gelatin. Put on a low flame and keep stirring, letting the mixture slowly set. When it has thickened, pour it into 10 small cake tins. Leave to cool, cover with aluminum foil or cling film, and leave in the refrigerator for at least 3 hours. Before serving garnish with chopped almonds and chopped pine nuts.
