1. Mix 3 eggs with 120 g (4.2 oz/ 1 cup) of brown sugar, 40 g (1.4 oz/ 1/3 cup) of honey and a generous sprinkling of cinnamon.

2. Add 270 g (9.5 oz/ 2 cups) of whole wheat flour, 30 g (1 oz/ ¼ cup) of cornstarch and continue mixing.

3. To soften, add 120 ml (4fl oz/ 1 cup) of plant-based milk (we used coconut milk, but anyone is fine) and 100 ml (3.4 fl oz/ 3/4 cup) of oil (seed or almond).

4. Continuing to mix, add 1 sachet of yeast.

5. Add 4 figs and 4 chopped walnuts to the mixture and transfer it into a cake pan

6. Arrange other figs cut into quarters for decoration (you’ll need at least 10).

7. Bake at 180°C (356°F) for about 30-40 minutes.
